Caesar Salad with Crunchy Croutons
Green, delicious and quick!
1/2 cup raw cashews soaked in water for at least 10 minutes, drained and rinsed
2 garlic cloves, minced
1/2 teaspoon Dijon mustard
2 tablespoons nutritional yeast
1/2 teaspoon dulse flakes
1 teaspoon apple cider vinegar
1 teaspoon vegan Worcestershire sauce
1/2 teaspoon sea salt
1/2 cup water
Directions Preparing: 30 min
Step 1For the Dressing: Place all ingredients into a high-speed blender and blend until creamy, at least a minute.
Step 2For the Croutons Preheat oven to 350. Place bread chunks in a large bowl and add a few shakes of onion power, garlic granules, sea salt and whatever herbs you like such as dried dill. Place on a cookie sheet and place in oven (or toaster oven) at 350 for about 20 minutes or until they are golden brown and crispy. In a large bowl add the romaine, sliced red onion, radish, cucumber, fresh herbs ( just a little of each), avocado and croutons. Add the dressing and then mix until everything is coated in the yummy dressing. Top with fresh black pepper and serve.
Step 3For the Salad Romaine lettuce, chopped in bite-sized pieces, as much as you’d like Red onion, thinly sliced, as much as you’d like In a large bowl add chopped romaine and sliced red onion.. Add the dressing and toss until everything is coated. Add the croutons and toss again. Finish with a few grinds of black pepper and enjoy.
